Cooked, spiced Peanuts
Total cooking time 39 minutes
Total preparation including cooking approx 45 minutes
Cooked in 18L air fryer but works in larger unit (I've also used 30L air roaster successfully) and probably (I can see no reason it won't) in smaller unit.
500gm peanuts preferably skin on but blanched works.
1 Tbs olive oil for blanched peanuts, 1/2 Tbs olive oil for skin on.
Mix: 1 Tbs Salt
1Tbs powdered Chippotle
1tsp Cumin
1tsp Coriander
1tsp mustard seeds - crushed (optional)
1tsp Celery Seeds - crushed
Mix should do 3 or 4 lots of peanuts if kept in small seal-able container.
Heat peanuts 12 minutes, 145C I use ring-type sponge dish.
Add Olive oil, stir thoroughly to coat peanuts, return to cooking dish and heat again for 12 minutes at 145C.
Add mix to taste (I like about 1/3rd of mix per batch) making sure you spread over all peanuts by stirring nuts while adding.
Heat 9 minutes at 145C, stir thoroughly and heat for 6 minutes again at 145C.
Allow to rest for 15 minutes.
Serve or store - will keep for a week or so in sealed container unless I get at them first.
I eat a small ramekin (about 2 Tbs) daily and they certainly keep me regular.
