The recipe called for hunks of pre-cooked pork.
I purchased a 1.5Kg hunk of leg pork (bone in) from Woolworths.
Prepared the pork simply by cutting in, in three parts, a wildfire chilli then added the pork and 150ml of Pinot Gris to a slow cooker, closed the lid and slow-cooked for 4 hours.
After cooking I emptied the evaporated water collector on the cooker (about 50ml), wiped up the excess evaporated water lying beside the cooker, opened the cooker and removed the cooked meat.
I then poured off just under 600 mls of excess liquid (fatty water), dried the meat (20 minutes in air-fryer at 180C) and put aside for the recipe.
Poured about 25mls of excess water out of the cooker.
So from 1500gm of "meat" and 150ml of wine I collected almost 600gm of water/wine/fat liquid.
That's fraud!
Fraud that happens at supermarkets every day but no-one in authority will even acknowledge, let alone address.
Find a good butcher, it will be worth your effort.
